Thinking of Dinner Ideas

Posted in Dining

A lot of Americans don’t cook well. They have a lot of other things to do. Sometimes fast food is their only alternative in the midst of a busy day. Quick, healthy, inexpensive meals aren’t easy to plan, that’s the problem. It’s not that hard, folks. With the Internet, Cooking shows, and food demonstrations daily at supermarkets, it’s easier than ever to plan a whole week of meals. Now for some excellent dinner ideas.

Corn dogs are an all American tradition, usually served at state fairs and by street vendors. While not a healthy food, it is a tasty one that is easy to prepare. The batter is flour, corn meal, salt, sugar and baking powder mixed with milk. Then coat the dogs and fry until golden brown. Put the dog on a stick for an authentic feel.

In colonial times, dinner was an afternoon meal, followed by a later light meal called supper. As time went by this changed based on social class and schedule. Afternoon dinner helped those with physical jobs make it through the later part of the day. As times change and we move away from regular meals at home, dinner has become the anchor that keeps families together and signals the end of the out of the home portion of the day and the beginning of at home leisure time. Most people call the big meal either or both of supper or dinner. That doesn’t mean the meal has to be large, especially for people watching their waist lines. Try a roast chicken salad.

Busy schedules and crock pots were made for each other. Set it, forget it, then return home to a well cooked meal. The whole meal can cook without supervision. Cook a roast with some cut up potatoes and carrots. Pick up some salad and a fresh loaf of bread at the store. Or you can ditch the bread to keep down the pounds.

Excellent home Cooking isn’t hard – try pork chops, or steaks on the grill. For more dinner ideas, Google the term. The Internet is loaded with them.

The Playhouse Theater has its own special story. That theater began hosting the play “I Do! I Do!” in 1971. The run lasted all the way to 1993. To top off 22 years of entertaining there, the play boasted the same cast from opening day to the last curtain call. Chanhassen built it’s fame on that play with 700,000 total viewers, 125 watching at a time.

Over the years some of the most well known plays have had their run at Chanhassen. Sound of Music has played there a number of times, the last time from May 30, 2003 through early June in 2004. Carousel Dinner Theater In Akron Ohio

Posted in Dining

Akron Ohio’s Carousel Dinner Theater has “expect the unexpected” as its motto. With people busier than ever in the past, recreation time is more important than it’s ever been. Dinner theater is always an enjoyable experience.

The Carousel calls itself the largest professional dinner theater in the country, but many dinner theaters seem to make that claim. Whether that boast is true or not, Carousel is amongst the top. Carousel employs union actors, technicians and musicians. It’s not just a matter of supporting unions. It’s a matter of ensuring that every element of the production is undertaken by serious professionals.

Born in a converted supermarket in 1973, Carousel moved to its current digs in 1988. People can see the show while enjoying the meal, or fore go the meal in favor of just taking in the show . Recently more theater professionals from New York have been hired. This means the shows are even better than in the past.

Recently the theater world has been memorized by “Wicked” . This is the back story of the witches from the Wizard of Oz. Patrons are urged to see the story that started it all, as Carousel is currently showing the Wizard of Oz. This production boasts a colorful Proscenium, which is the frame around the stage that rotates the different sets into place. This and other details of the play are discussed on Carousel’s Wizard of Oz blog at http://carouseldinnertheatre.blogspot.com . Yes, plays like many people now have their own web sites.

Given its proximity to Broadway and the attraction to New York theater professionals, over the years the Carousel has hosted quite a number of Broadway productions. It was “the Odd Couple” in 2008. Others include Annie, Grease and even the Sound of Music. It’s almost a Broadway off Broadway, where you can enjoy a meal while watching a top quality play. High School Musical will play there in 2009.

Enjoy New York without the traffic at the Carousel Dinner Theater. Try it you’ll like it.

How Much Absinthe is Recommended?

Posted in Wine

There is much interest in Absinthe, which is also known as Green Fairy or La Fee Verte. People want to know what is the recommended amount of Absinthe to use when preparing a drink, how to buy it, what type to by and how to prepare it.

First you will need to buy quality Absinthe which is rich in essential oils and that contains wormwood. There are Absinthe substitute and fake Absinthes on sale that contain southernwood or roman wormwood instead of common wormwood (artemisia absinthium). Make sure you buy a real Absinthe. If you are in a country where it is hard to find a good quality Absinthe then you can make your own using essences from AbsintheKit.com.

After you have your Absinthe, you will need to learn the Ritural, or La Louche. This is the traditional French or Swiss way of preparing Absinthe and it uses one shot of Absinthe. Here are the instructions to follow:-

To perform the Ritual, you will need an Absinthe glass, a slotted Absinthe spoon, a lump of sugar and iced water.

- Pour between 25 - 50 ml of Absinthe into a glass.
- Rest the special spoon over the rim of the glass and place a cube of sugar on it.
- Showly drip iced water over the suger either by using a steady hand to pour from a carafe or from the tap of the fountain. Dripping it slowly will give the sugar chance to dissolve and drip through the slots of the spoon. You will see a lovely “louche” effect as the water mixes into the alcohol. The drink louches as the oils of the herbs are souble in alcohol but not in water and therefore make the mixture cmoudy when water is added.
- Sit down and enjoy your drink.

The Czech or Bohemian Method is very similar to the Ritual but is a modern way of preparing cheap Czech Absinthes. The Bohemian method is scorned by many Absinthe followers.

Tips and instructions for using the Bohemian method:-

- Pour 25 to 50 ml of Absinthe into a glass and dip the cube of sugar into it and soak the sugar.
- Place the sugar cube on the Absinthe spoon and rest the spoon on the rim of the glass.
- Set the sugar cube alight for one minute to allow the sugar to caramelize and melt. The sugar should drip thru the slots of the spoon and into the Absinthe.
- Put the spoon into the glass while pouring the iced water into the Absinthe to put out flames and to cause the Absinthe to louche.
- Enjoy.

If you want to enjoy your Absinthe properly the you will want some Absinthiana – Absinthe glasses, spoons and perhaps even an Absinthe fountain to control the flow of the water. You can find replicas of antique spoons and glasses for purchased from AbsintheKit.com.

What is the recommended amount of Absinthe to use when preparing an Absinthe drink? Use about 45 ml or a US shot. Obviously Absinthe can be used in cocktails so to a Google search to find recipes online.

Only purified water benefits your health

Posted in Cooking

Pure drinking water is second only to oxygen as the most important necessity of a healthy life.

We as a human race can live for around a month without eating but we would die if we did not drink healthy water for three days. The human body consists of around 80% water and if we did not drink plenty to replenish this, our system would poison itself.

Drinking pure water helps the body to digest food and keeps our temperature consistent. It also distributes life giving oxygen to the body and removes waste and buidl up of toxins. You can begin to see what may happen when we lack drinking water in the amounts we need to function - the body can begin to suffer from the debilitating effects of dehydration. Some of the effects of this are:

  • Stomach Pain
  • Lack of Energy
  • Dry “Cotton” Mouth
  • Dizziness and Headaches

Long term, the effects of dehydration can cause issues such as weight gain, high stress levels, kidney stones and other urinary problems and even asthma.

Converslely, the health benefits of drinking water include increased concentration, healthy skin, protection against colds and flu and detox of your body’s natural build up of toxins and waste.

It is well known that 8 glasses of water per day is about the right amount of water to drink to stay healthy, vital and active. This amount is simply a guide to how much pure water you should drink. Obviously if you are exercising or are experiencing higher than normal temperatures, the health benefits may be lost if you do not increase your intake.

8 glasses of water per day is enough to cover the body’s natural loss of around 2.4 litres of water per day. This is lost through perspiration, urine, sweat and faeces on a daily basis, and an increase in the loss from any of these areas will require an increase in the intake of drinking water to make up for this loss.

Be sure to benefit your health from drinking pure water.

Smoking food for preservation and flavour

Posted in Cooking

Making Smoked Salmon

Throughout history and across the world, people from all cultures have used smoke to flavour and preserve a wide range of perishable foods, though meat and fish are the most common. For centuries it was, along with salting, an essential way of maintaining subsistence over late winter and into spring. It also allowed for fish to be consumed inland, as they could not be transported any distance from the port of landing unless they were preserved. Traditionally for sale only in home markets, the use of smoking for preservation allowed fish to be widely exported to the West Indies in the infamous Triangle Trade between Britain, it’s northern colonies and the West Indian plantations.

The rapid growth of logistical infrastructure, begining in the 1840s, enabled the transportation of perishables including large quantities of fresh fish over even longer distances. Heavily smoked and salted products began to dwindle as a result of the improvements to transport infrastructure, as more food could be delivered without the need for such preservation. Smoked fish and meat soon became traditional products, rather than necessary ones. Where smoking was once necessary to preserve food, it is now used more often to simply provide a pleasant mild smoky flavour.

Nowadays, smoking for preservation is common in less developed countries where transportation is limited and climate extremes impact upon food life cycles. In more developed countries where transportation and methods of preservation are increasingly efficient, smoking remains popular for texture and flavour. Smoking of fish especially has remained very popular. Smoked salmon, for example, is considered something of a delicacy in many parts of the world due to it’s delicate taste and moderately high price. Smoked mackerel and smoked haddock have also remained particularly popular. Fish can be cold smoked, to be cooked at a later date, or hot smoked, providing a stronger flavour and Cooking the fish as it smokes.

Chicken Bon Vivant

Posted in Cooking Recipes

By Jim Nettleton

Here’s another tasty recipe from my private collection. Enjoy!

Normal 0

INGREDIENTS

4 chicken leg quarters, skinned

2 large cans chicken broth

1 small package saffron yellow rice

1 small package Velveeta cheese

1/2 pint heavy cream

1/2 tsp. garlic powder

1 tsp. ground rosemary

1 tsp. poultry seasoning, preferably Chef Paul Prudhomme’s Poultry Magic

2 tsp. dried minced onions

1/2 tsp. black pepper

1 tblsp. flour or cornstarch

In a large pot place chicken broth, garlic, rosemary, poultry seasoning, minced onions and pepper. Add chicken. Cover pot and bring to boil. Reduce heat to active simmer. Cook for 40 minutes or until tender.

Meanwhile, prepare rice according to package instructions.

Pre-heat oven to 425 degrees.

When chicken is done, remove from pot and save pot contents. Place chicken in lightly buttered baking dish and put in oven to crisp for about 15 minutes – keep an eye on it to avoid overdoing the crisping.

While chicken is baking, strain liquid in the pot, then return the liquid to the pot. Pour off all but about 3 cups of the remaining liquid.

Cut Velveeta into small pieces to aid melting. Add cheese to the pot. Add the heavy cream. Over medium heat, stir thoroughly until the mixture is smooth. Mix flour or cornstarch with a small amount of warm water to smooth, then add a little at a time to thicken the sauce, while stirring constantly. Mixture should be thick enough to pour slowly.

Place a bed of rice on each plate, place 2 leg quarters on top of the rice and smother thoroughly with the sauce.

Serves 2.
