The Home Baker shows you how to make bread

Rob de Wit of Orpington Close in Luton is so passionate about what goes into bread that he's running courses to help others use their loaf. His day job in finance goes by the board at weekends when he runs classes in his kitchen to demonstrate just how simple it is to make dough. He says: "Most people feel the bread before they buy it. They squish the top to see if it's fresh." He pulls a pained face and adds: "So that's what you're taking home, something that's been fingered by other customers. And it's either full of additives or has had all the goodness bleached out of it." He was so fed up eating rubbish that he decided to teach himself how to bake. "If you really want to learn something, that's the way to go," he says. "And I just enjoy it, experimenting with different flours and trying different shapes." But he admits attending a couple of courses himself - just to make sure he was doing everything correctly. He's also taken to teaching with amazing ease. He explains: "I like to keep it hands on so I have no more than three students at one time. That way I can show them what to do. You don't have to have lots of fancy equipment - all you need is a mixing bowl, scale and jug for water." He says most people consider breadmaking too much like hard work: "It's not part of the modern schedule. But many ovens nowadays have a 'proof' setting so you don't even have to sit around too long waiting for it to rise." Sunday courses with the Homebaker cost £65 and last from 9.30am until 4pm. Christmas Eve at Hollywood Station, 2008

Christmas Eve, 2008. I'm in Hollywood, my hometown, visiting family and friends for the holiday. I decided to go out and railfan for a while. If I leave now, I should be able to get Amtrak P097 and P091, but it'll be close. It's 5:30 and the Silver Meteor is scheduled to pull into Hollywood Station at 6:02. If I leave now, I should make it there with just enough time to set up my equipment. Normally, I'd be on the FEC at this time, getting ready for train 222, but there's no traffic on the FEC today; They're shut down until Friday... Bummer. I'm going to the only place to see trains today, the South Florida Rail Corridor. Those familiar with South Florida know that the SFRC is where Tri-Rail and Amtrak operate. It's part of the CSX Miami Sub from MP SX966 in Mangonia Park to to just beyond MP SX1037 in Miami. The Florida Department of Transportation purchased the r/w from CSX in 1989 and shortly afterward formed the South Florida Regional Transportation Authority which operates Tri-Rail. Under the terms of the purchase agreement, CSX would continue to provide dispatch services and track maintenance and would have exclusive freight trackage rights until certain conditions were met. In 2007, a double-track project to upgrade the line was completed with the opening of a fly-over bridge at the New River in Fort Lauderdale. Since then, the SFRTA has assumed full dispatching and maintenance responsibility. First up is Tri-Rail P638, a Colorado Railcar DMU running north between Hollywood and Sheridan St. stations. I got to the crossing just in time to catch it. While I was there, I called 1-800-USA -RAIL to get a train status on P091 and P097, only to learn that P097 had arrived 23 minutes early and just departed Hollywood Station. You can hear me speaking to "Julie", Amtrak's automated system, at 00:07 when I say "repeat that". From there, I went over to Hollywood Station. A former Seaboard Air Line depot originally built in 1926. I got there just in time to get P639 pulling into the station with engine 803, an F40PH and two Bombardier BiLevel coaches full of passengers. Five minutes later, its P640 northbound from Golden Glades station with engine 811 and three coaches. Tri-Rail operates their trains in push/pull fashion with the power always facing south. A little time to kill before the next train. I've been hearing emergency sirens for the past ten minutes or so. I turned on my camera in time to catch a westbound rescue unit, likely rushing a patient to Memorial Hospital, not far away. Next up is P642 with three BiLevel coaches and engine 807. P642 is met soon after by P641 with engine 810 and two coaches. A few more minutes to kill between approaching trains, an eastbound fire truck races by.... Followed by A Battalion Chief's command vehicle exiting I-95. There must be a fire or a major accident nearby. Now, what I really came for... Amtrak P091, the 964', 48 axle southbound Silver Star led by P42DC #160. This train was originally scheduled to arrive at 5:28, but something up north caused this train to be seriously delayed. In fact, it should've arrived ahead of P097, the Silver Meteor which pulled into the station at 5:50, 23 minutes early. A friendly aknowledgement from the engineer and it's off to Miami; the end of the line where the the entire train will be inspected, serviced and turned around on the baloon track for it's return trip north as P092 tomorrow morning. In all, I caught eight trains in less than an hour and a half... P644 and 643, which arrived after the Silver Star had left, were not included in this video in order to keep it less than 10 minutes long. They arrived at 7:16 and 7:20, repectively. That's enough train action for one night. It's back to my parent's house for some of mom's home cooking. Tonight, it's meatballs. Mmm... Yummy. I'm your host, Ted Marshall. Thank you for joining me.

*Okay, so, here are the Characters: Mary- 15, Lidnesy-18, Kasiey-20.--The Girls. Nick-16, Joe-19, Kevin-21.-- The Guys. So, Mary works for Miley as her Maid. Miley doesnt treat her that nice though. She lives with Selena Gomez because Miley wont let her stay at her house. Selena and Mary are bestfriends. (Mary is at Miley house) Miley- MARY!!! Mary- Yes, Miley. Miley- I need this house to be spotless. CLEAN EVERY ROOM! Mary- But that will take a long time, and some heavy equipment for example a bull dozer!(under her breath)espicailly for your room. Miley- Dont back talk me young lady! My boyfriend and his brothers are comming over for dinner tonight and i want EVERYTING to be perfect for them! Mary- Can i just clean the downstairs then since they wont go upstairs?? Miley- You so lazy! Mary- ME?! You got me- Miley- Think about your job before you finish the rest of that sentence! Mary- Yes miley. Miley- Okay, clean just the downstairs and when your done with that, start making dinner!! Mary- Yes ma`m. Miley- Good. NOW GET TO WORK! *She cleans the rooms, and shes making dinner.* Mary- What is this!?!? Fried chicken, shrimp, crembula, french fries?? That girls crazy. Miley- start cooking! Mary- OKay!! * She starts cooking, and she has to cut the shrimp, but she accidentally cut herself* Mary- Oww!!! Miley- whats wrong?!?! Mary- I cut myself with the knife!! Miley- Makesure no blood gets in the food!!! Mary- Of course.(under her breath) she cares more about the food than me. *She finishes dinner. And the doorbell rings* Miley- Mary!!! Go get the door!!! Mary- Im going!! *opnes the door* Mary- Hey yall. Cmon in. JB- Thanks. Mary- You guys can have a seat over there(points) until(under her breath) the wicked witch of the west, Miley get here. Nick- Is she comming? Mary- Yes, she just finishing getting- Miley- Here!!(runs up to Nick and hugs him and kisses him) Hey baby. dinner will be out soon. lets go sit at the table. JB- Okay. (they are sitting at the table, its been 5 mins) Miley- MARY!!! wheres our drinks?!?!?! Mary- Comming!(she gives drinks to everybody) Miley- You`ll have to excuse her. Shes a little slow. Mary-(gives Miley a mean look and rolls her eyes) Miley- dont you roll your eyes at me! Mary- Dont tell me what to do! Miley- Your a maid! Mary- ya, and you tell me to do your chores that your too lazy to do!!!! Joe- oooOOOooo. Miley- (pulls Mary aside and whispers in her ear) What are you doing?!?! Mary- (baiscally yells) SOMETHING I SHOULDVE DONE A LONG TIME AGO!! Miley- Like what? clean the fishtank?? Mary- NO! I QUIT!! GO CLEAN THAT FISHTANK OUT YOURSELF!!!! Miley- Cmon Mary! You dont actually mean your quiting. Mary- YES I AM!!! IM SICK OF YOU MILEY!!! YOUR JUST A SELF-CENTERED JERK WHO DOSENT CARE ABOUT ANYONE BUT YOURSELF!!!! Miley- Dont talk like that to me!! Mary- YEAH, I WILL AND I CAN CAUSE YOUR NOT THE BOSS OF ME ANYMORE! Miley- Fine, ill just find myself a new maid. A better one. Mary- Fine, you do that. Goodbye Miley!!!!!! (walks out and slams the door) Joe- oooOOOooo. Nick- Shut up Joe!! Man Miley, what got into her?? Miley- I dont know. I treat her very well. I dont make her do THAT many things. Nick- Then why is she so mad? Miley- Who cares. Lets just eat. Nick-(under his breath) she was right, you really dont care about anyone but yourself. Miley- What was that baby?? Nick- Oh nothing Joe- right *winks* Nick- oh shut up Joe! (they finish dinner and are about to leave, Nick doesnt talk that much during dinner, cause hes thinking about Mary) Joe- Thanks for dinner Miley. Miley- Your welcome. Nick, did you enjoy it?? Nick- Huh?? oh yeh. thanks..... Miley- Is there something wrong? Nick- huh? oh no. im fine. Miley- Okay... well goodnight! Nick- goodnight... (miley leans in to kiss him, but he pulls away.) Nick- goodbye miley. Miley- bye nick. (confused) (walking home) Nick- So why do you think that girl was so mad? Kevin- What girl? Nick- That maid.... Mary? Kevin- Oh, i dont know. Joe- She was pretty cute. Nick- Shes 14 Joe. Joe- oh.... and how do you know?? Nick- I asked miley. Kevin- were you thinking about her at dinner? Is that why you werent talking? Nick- Yeah. I think i might break-up with Miley. I just dont feel the same anymore. I wanna find Mary. Get to know her. Joe- Your gonna breakup with miley?!?! Kevin- He JUST said he was Joe. Joe- Ya i know. Nick- That Mary girl was pretty cute. I wonder where she lives.... ......................................................................... okay so, really no cliff hangers here. but... will Nick find Mary??
